Summary

fix(cms): read the GraphQL operation name with graphql

Description

Because:

- Apollo Client 4 removed getOperationName from @apollo/client/utilities, so shared-cms no longer builds.

This commit:

- Gets the operation name with getOperationAST from graphql in the five CMS configuration managers.
- Builds real DocumentNodes in the two specs that mocked getOperationName.
